Abstract

During the summer of 1973, I had the opportunity to manage a small carry out pizzeria. The business was owned by two men who had felt that owning a pizzeria offered them an attractive investment. They could not have been more wrong, because within eighteen months it was obvious that the operation had failed. Sales had all but dried up; they were not meeting expenses; and trade credit was becoming impossible to obtain. This paper was written so that the next time they, or anyone else, enters business, they will do so only after evaluating the opportunity and developing some realistic expectations.
