Separating buttermilk for harvesting of milk solids, Boir Ahmad
Heating buttermilk after the butter has been removed. The milk solids are strained out and rolled into balls (kashk). Kashk is stored for winter to sell and as a source of buttermilk. This is often the only protein that families have to eat all winter.
